Recipe: Mushroom and Spinach Pasta with Lemon and Garlic

This recipe for Mushroom and Spinach Pasta with Lemon and Garlic can be made with any meaty mushroom and your favorite pasta. I made ours with oyster mushrooms and farfalle, and I also added zucchini and ground turkey, which is optional.

I’m sharing this recipe to go with a post about trying out a mushroom growing kit. So, I actually grew the oyster mushrooms I used in this recipe! This dish really brings out the savory flavor in the mushrooms and garlic and gives everything a zesty lemon flavor that’s just not and not overpowering.

Making Mushroom and Spinach Pasta with Lemon and Garlic

This is a very relaxed recipe and can easily be adjusted to add more veggies or leave things out of you don’t like. The main important things for flavor are the mushrooms, garlic and lemon.

Ingredients:

1/4 cup extra virgin olive oil

3 cloves of garlic, chopped

At least a cup of sliced mushrooms

Whatever other veggies or meat you might want to add. (I added zucchini and ground turkey)

6-ounce bag of baby spinach

Pasta of your choice

Zest of 1 lemon

Juice of 1 lemon

Salt & pepper to taste

Shaved parmesan for topping

Cooking Instructions:

Make sure you use a large skillet so you can fit in all the ingredients and pasta at the end.

  1. If you are using a ground meat, cook that first and set aside.
  2. Also cook your pasta and set aside.
  3. Pour the olive oil in the pan and add garlic. Let this cook on low for a bit while you are prepping pasta and other things. You want the oil to soak in the garlic flavor. Don’t turn up the heat too high or it will burn and ruin the flavor.
  4. Add mushroom and veggies and cook until soft.
  5. Add spinach and cook until just wilted.
  6. Add in meat (if you made meat)
  7. Add pasta and mix everything together.
  8. Add lemon zest, lemon juice, salt and pepper
  9. Mix well until everything is coated and warmed up.
  10. Serve warm and top with parmesan. You can also toss a handful of parmesan in when you are adding the sauce ingredients for a flavor boost.
